An esteemed game lodge is seeking a passionate and experienced Executive Chef to lead the kitchen team. This role is vital to delivering extraordinary guest experiences and ensuring the sustainability of the community and environment. We are looking for an Executive Chef who embodies these values, overseeing daily operations and ensuring a memorable culinary experience for guests. The Executive Chef will manage all aspects of kitchen operations, including the Staff Canteen, and will be a key reference for both kitchen staff and guests. This role requires a team player and effective leader, capable of fostering a climate of guest delight within the lodge.
Description
- Maintain high standards of professionalism within the team.
- Provide disciplined and inspirational leadership to the kitchen team, ensuring productivity and service excellence.
- Identify and develop staff talent, creating plans for retention, development, and growth.
- Full responsibility for guest and staff food budgets.
- Ensure adherence to financial and record-keeping controls and systems.
- Collaborate with the Regional Executive Chef to align menus and food quality with lodge standards.
- Monitor and achieve food scores and budget targets.
- Work with Guest Relations Managers and Head Guide to maintain service standards and uphold the lodge’s core values.
- Daily meetings with Heads of Departments (HoDs) to discuss plans, including arrivals, departures, maintenance, food, special requests, and guest delights.
- Ensure compliance with health and safety standards, including Covid-19 and HACCP Protocols.
- Oversee the health and safety of guests, staff, and lodge assets.
- Assist with meeting and improving sustainability targets annually.
- Manage uniform orders and ensure staff adhere to uniform standards.
- Oversee month-end stock takes and ensure smooth daily kitchen and canteen operations.
- Maintain cleaning rosters in compliance with Botswanan regulations.
- Record and manage staff sick leave, leave cycles, and work rosters.
- Attend daily HoD and morning meetings, unless engaged with guest activities.
- Conduct daily department meetings to communicate pertinent information.
- Ensure effective communication between kitchens, Lodge Managers, Guest Relations, and Butlers.
- Hold pre-service meetings with chefs and butlers.
- Meet and cater to guests with special dietary needs.
- Ensure timely and accurate stock orders, recording shortages.
- With approval from lodge managers, make necessary menu changes to enhance guest and staff services.
- Maintain an ethos of delighting guests and staff.
- Conduct regular training for all food service staff, ensuring standards are maintained.
- Aim to achieve and maintain a 96% food score in guest feedback.
- Maintain consistent cost per head for guests and staff.
Minimum Requirements
- Knowledge of hospitality, environment, surrounding communities, Botswana, and company values.
- At least 3+ years of relevant experience as an Executive Chef, with a passion for creating fabulous food.
- Experience in the service industry, especially in dealing with guests and staff.
- Demonstrate honesty, transparency, respect, and consistency.
- Take pride in personal appearance, team presentation, and the lodge’s overall appearance.
