Senior F&B Supervisor – Luxury 5-Star Boutique Hotel - Franschhoek

 

An intimate 22-guest boutique hotel in Franschhoek is looking for an experienced, hands-on F&B Duty Manager to oversee its daily food and beverage service and assist with the wider operation of the property.

This is a visible, guest-facing position managing a team of six across front and back of house. The successful candidate will have strong leadership skills, sound food and beverage knowledge and the confidence to take responsibility for the hotel while acting as Manager on Duty.

Salary: R20,000–R25,000 per month, negotiable depending on experience
Location: Franschhoek, Cape Winelands

Description

Food and Beverage Operations

  • Oversee the daily operation of the restaurant, bar, breakfast service, room service and special dining experiences.
  • Maintain consistently high food, beverage and service standards.
  • Work closely with the chefs on seasonal menus, incorporating produce from the hotel’s vegetable garden where possible.
  • Monitor food quality, presentation and service consistency.
  • Conduct restaurant and service-area inspections before each service.
  • Ensure all service areas are clean, organised, properly stocked and ready for guests.
  • Oversee beverage service, wine lists and stock control.
  • Resolve guest complaints promptly and professionally.
  • Ensure compliance with food safety, hygiene and health regulations.

Guest Experience

  • Welcome guests and maintain a visible presence during service.
  • Build relationships with returning guests and create warm, personal dining experiences.
  • Respond to guest feedback constructively and without delay.
  • Identify practical ways to improve the overall guest experience.

Team Leadership

  • Lead, motivate and support a six-person food and beverage team.
  • Conduct daily briefings before service.
  • Train new team members according to the hotel’s standards.
  • Coach staff on service delivery, product knowledge and upselling.
  • Encourage accountability, teamwork and a positive working environment.

Financial and Stock Control

  • Monitor departmental expenditure and assist with cost control.
  • Manage food and beverage stock levels.
  • Conduct regular stock counts and investigate variances.
  • Reduce waste and support departmental profitability.
  • Monitor daily sales performance.
  • Assist with menu pricing and costings.
  • Check and approve supplier deliveries and invoices.

Duty Management

  • Act as Manager on Duty when required.
  • Oversee the operation of the guesthouse during assigned shifts.
  • Coordinate communication between departments.
  • Respond calmly and decisively to operational problems, emergencies and incidents.
  • Conduct regular property inspections.
  • Assist Reception during busy periods when required.
  • Ensure guest requests are handled efficiently and luxury service standards are maintained throughout the property.

Administration and Compliance

  • Complete daily manager reports and maintain accurate stock records.
  • Assist with monthly operational reporting.
  • Ensure Standard Operating Procedures are followed and updated where necessary.
  • Conduct hygiene and safety inspections.
  • Report maintenance concerns promptly.
  • Maintain accurate incident records.
  • Ensure the team understands the property’s emergency procedures.

Minimum Requirements

Minimum Requirements

  • A minimum of three years’ food and beverage management or senior supervisory experience, ideally within a luxury hotel, lodge or boutique property.
  • Previous Duty Manager experience would be advantageous.
  • A hospitality qualification is preferred.
  • Strong leadership, guest relations and problem-solving skills.
  • Good financial awareness, with experience in stock management and cost control.
  • Sound wine and beverage knowledge.
  • Knowledge of food safety and hygiene requirements.
  • Computer literacy, including Microsoft Office, Excel and point-of-sale systems.
  • A valid driver’s licence and own reliable transport.
  • Willingness to work shifts, evenings, weekends and public holidays.

 

This position requires someone who enjoys being present in the operation, takes ownership and can move comfortably between restaurant service, guest relations and duty management.
