Description
Working closely with the Head Chef, you will oversee the day-to-day operations of the lodge kitchen, ensuring exceptional food quality, consistency and presentation across every service. You will lead and mentor the kitchen brigade, assist in developing innovative menus and recipes, manage stock control and ordering, and ensure the highest standards of food safety and hygiene are consistently maintained. This guest-facing role also requires interaction with guests to enhance their dining experience while contributing to the smooth and efficient operation of the kitchen.
Minimum Requirements
- Grade 12 qualification
- Culinary qualification from a recognised chef school preferred
- Minimum 2 years' management experience as a Sous Chef or Senior Sous Chef within a luxury five-star lodge or hotel
- Proven experience in fine dining and à la carte service
- Strong leadership, coaching and team development skills
- Excellent knowledge of food safety, hygiene and kitchen operations
- Experience with stock control, budgeting and kitchen administration
- Sound knowledge of dietary requirements and menu planning
- Computer literate with strong organisational and communication skills
- Wine and food pairing knowledge will be advantageous
