About the role

Our client is seeking an experienced and hands-on Sous Chef to join the culinary team at a luxury safari lodge in the Hoedspruit / Greater Kruger area. This is a live-in opportunity for a chef with strong kitchen leadership skills, excellent food standards and the ability to work effectively within a remote luxury lodge environment.

• Support the Head Chef with daily kitchen operations
• Lead the kitchen team in the Head Chef's absence
• Maintain consistently high food quality, presentation and portion standards
• Assist with preparation and service across all meal periods
• Supervise, train and motivate junior chefs
• Maintain effective mise en place and kitchen organisation
• Assist with menu planning and implementation
• Monitor stock levels, ordering, receiving and storage
• Maintain FIFO and effective waste controls
• Assist with food-cost management
• Cater confidently for dietary requirements and special guest requests
• Maintain excellent food safety, hygiene and kitchen cleanliness standards
• Support special dining experiences and lodge functions
• Work collaboratively with Front of House and lodge management

What they're looking for

• Relevant culinary qualification preferred
• Proven previous Sous Chef or strong Senior Chef de Partie experience
• Luxury safari lodge, boutique hotel or comparable high-end hospitality experience advantageous
• Strong à la carte and quality food-production skills
• Good kitchen leadership ability
• Understanding of food cost, stock control and waste management
• Knowledge of food safety and hygiene requirements
• Able to work effectively under pressure
• Hands-on, organised and team oriented
• Comfortable living and working within a safari lodge environment
