About the role
Head Baker – Multi-Outlet Coffee Brand - Cape Town A growing, quality-focused coffee brand is seeking a talented and ambitious Head Baker to join its central production kitchen in Claremont. The successful candidate will lead the daily production of artisan breads, sourdough, pastries and cakes supplied to four coffee outlets. This is an excellent opportunity for a well-trained baker in the earlier stages of their career who has strong technical skills and is eager to grow into a more senior role as the business expands. Location: Claremont, Cape Town Working Hours: Five-day working week, rostered across a seven-day operation Shift: 04:00 start
- Lead the daily production of artisan breads, sourdough, pastries and cakes.
- Manage dough preparation, fermentation, proofing and baking schedules.
- Ensure consistently high-quality products are supplied to all four outlets.
- Monitor product consistency, presentation, portioning and freshness.
- Maintain strict food-safety, hygiene and kitchen standards.
- Organise the production kitchen and ensure it is fully prepared for early-morning service.
- Work alongside and provide direction to the existing kitchen team.
- Monitor ingredients, production requirements and stock levels.
- Minimise waste through accurate preparation and production planning.
Potential for Growth
- As the successful candidate develops within the position, the scope of the role may expand to include:
- Managing quality control across multiple outlets.
- Overseeing centralised production and portion-distribution systems.
- Assisting with demand forecasting and production planning across the outlets.
- Taking on broader leadership responsibilities within the kitchen operation.
What they're looking for
- Formal baking or pastry training, supported by relevant practical experience.
- Experience gained in a professional, quality-driven kitchen environment.
- Exposure to a destination restaurant, artisan bakery or similarly high-standard operation would be advantageous.
- Confident producing a varied selection of breads, pastries and cakes at volume.
- Experience working with naturally leavened doughs, particularly sourdough.
- Strong understanding of fermentation, dough development, proofing and baking techniques.
- Comfortable leading while remaining hands-on in daily production.
- Reliable, disciplined and capable of maintaining exacting standards.
- Organised and able to manage production schedules effectively.
- Ambitious, eager to learn and excited by the opportunity to grow with an expanding brand.
- Must have reliable transport and be able to travel to Claremont for a 04:00 shift.
