About the role

Our client is seeking an experienced and highly motivated Sous Chef to join the culinary team of an award-winning fine dining restaurant in Stellenbosch. This is an excellent opportunity for a talented senior chef with strong leadership skills, exceptional attention to detail and a passion for delivering consistently outstanding cuisine within a luxury hospitality environment.

  • Working closely with the Head Chef, the Sous Chef will assist with the day-to-day management of the kitchen, taking responsibility for the operation in the Head Chef's absence.
  • You will lead and develop junior chefs, oversee food preparation and plating, maintain exceptional quality and presentation standards and ensure every dish leaving the kitchen meets the restaurant's requirements.
  • The role includes managing kitchen stock and ingredients, FIFO controls, ordering, waste reduction and food costs. You will assist with menu development, staff training, rosters and maintaining excellent kitchen organisation.
  • You will also ensure the culinary team is fully prepared for daily reservations, special events and menu requirements while maintaining rigorous health, safety and hygiene standards.

What they're looking for

  • Culinary Diploma or recognised professional culinary qualification
  • Approximately 4 years' previous experience in a senior chef role
  • Previous fine dining or luxury hospitality experience highly advantageous
  • Strong kitchen leadership and staff management skills
  • Excellent food preparation, cooking and plating standards
  • Experience with stock control, ordering and waste management
  • Understanding of food cost and budgetary controls
  • Ability to train, assess and mentor junior chefs
  • Strong organisational and communication skills
  • Exceptional attention to detail and quality control
  • Basic Microsoft Word, Excel and Outlook skills
  • Own reliable transport and valid driver's licence
  • Able to work evenings, weekends and public holidays as required
